METHOD:
1. Fill a pot with about 2 litres of water and bring to a boil.
2. Add 1 teaspoon of rock salt.
3. Add pasta and gently stir to prevent it from sticking. Leave it to cook for 7 minutes.
4. In a separate pot, sautee the guanciale until the fat is released and starts to turn golden brown.
*Chef Tip! Save the oil from the guanciale to be used in salad dressings or drizzled over toast. The guanciale oil is full of flavour.
5. After 7 minutes, strain the fettuccine and retain a cupful of pasta cooking water. The salty pasta water adds flavour and helps to bring together the pasta and sauce beautifully.
6. Over the stove, combine amatriciana sauce, pasta water, and fettuccine on low heat. Add the pecorino cheese and keep mixing until creamy.
7. To finish, plate the fettuccine and top with guanciale.
